About the producer

Svava used to live in Sweden, where a special strong mustard with a hint of sweetness is very popular. After moving back to Iceland, she started experimenting with making her own version of the mustard, as it was not available in stores in the country.

"I originally started producing the mustard that glazes Swedish Christmas ham, but we have incorporated many Swedish elements into our cuisine."

Mustard can be used in a variety of dishes. "My advice is to follow your intuition. We use mustard in all kinds of dishes, such as marinating meat, in salad dressings, with barbecue, in casseroles, on everything smoked and grilled, on its own, or in grilled salmon sauce. It's all about letting your imagination run wild. Then I can't help but mention a sandwich called the Goslokan or the Hunter, which is always a family lunch. The sandwich consists of two slices of bread with mustard, cheese, ham and lettuce. It's never a question of how the sandwiches should be prepared, but rather how many."
